Step-By-Step Instruction To Make These Tasty Acai Chocolate Pumpkin Seed Balls:

  1. Start by making pumpkin seed crumbs. Place ½ cup pumpkin seeds in a food processor and pulse until you have a chunky crumb consistency. Then remove the pumpkin seed crumbs from the food processor and spread them out evenly on a plate. Then set the plate aside, you will roll your balls in these crumbs at the end.
  2. Now add your dates, chia seeds, acai powder, cocoa powder, and chocolate protein to the food processor. Pulse on high for about 1 minute, until you have a thick cookie batter consistency.
  3. Then add your cashews and additional pumpkin seeds into the food processor, pulse until just mixed in, and roughly chopped. You might need to mix the batter up with a spoon or spatula a few times to get the nuts mixed in. You don’t want to just add the nuts at the beginning because they add additional texture to the balls, rather than being totally ground up.
  4. Now it’s time to add the water, but the amount of water depends on your ingredients and how moist they are. Try making a ball out of the current batter before adding water. Does the ball hold up and is it a little tacky on the outside? If yes then no water is needed, that is what you are looking for. If the ball wants to crumble and is not a little sticky then add a little water, 1 tablespoon at a time. No more than 2 tablespoons should be needed.
  5. Once you have the thick cookie consistency you can begin rolling your balls. The batter should allow you to make 18, 1 inch balls. After rolling your balls you can roll each ball individually into the pumpkin seed crumbs!
  6. If you find the balls are a little too sticky and sticking to your hands, you can dampen your hands, this will prevent the balls from sticking to them. If you think you added too much water to the batter, you can stiffen the batter up some by placing it in the fridge for about an hour, and then you should be able to roll your balls. This batter is delicious so even if your balls are a little too soft, they will still be super tasty!
