Bacon Cheeseburger Stuffed Peppers

Bacon Cheeseburger Stuffed Peppers…the most amazing stuffed pepper you will ever have. A low-carb, high-protein recipe….you won’t be missing your burger bun with this one!

Ingredients to make Bacon Cheeseburger Stuffed Peppers:

  • 1 Red Bell Pepper (about 250 grams)
  • 1 Orange Bell Pepper (about 250 grams)
  • 1 Yellow Bell Pepper (about 250 grams)
  • 1 Green Bell Pepper (about 250 grams)
  • 16 oz Angus 93% Lean Ground Beef
  • ¼ tsp Black Pepper
  • ¼ tsp Garlic Powder
  • ? tsp Sea Salt
  • 1 Yellow Onion diced, (about 150 grams)
  • 1 Jalapeno diced, (about 15 grams)
  • ½ cup Dubliner Cheese freshly shredded, any white cheddar works fine. (about 75 grams)
  • 4 slices Bacon cooked bacon, cut into small pieces or crumbled.
  • ½ tbsp Extra Virgin Olive Oil
  • 1 Red Chili Pepper sliced, (about 15 grams)
  • 1 tbsp Sriracha Mayo

Instructions:

This recipe calls for 4 slices of cooked bacon, If you don’t have cooked bacon, you will want to cook them first. Or you can use bacon bits.

  1. Preheat your oven to 375°
  2. While the oven is preheating, start by slicing your bell peppers in half, from the stem to the bottom of the pepper. Place 6 of your pepper halves into a baking dish, cut side up so you can stuff the peppers later. You want them to be nice and snug in the dish so they don’t move around on you.
  3. The other two halves you will dice. You can choose any of the 2 pepper halves to dice, I chose to dice half of the green and half of the orange.
  4. Next heat a large saute pan to medium heat. Add the ground beef into the pan. Start breaking up the ground beef with a spatula. And season with black pepper, garlic powder, and salt.
  5. Once you have the ground beef broken up and starting to cook, add the diced yellow onion, diced bell peppers, and jalapeno pepper. Cook with the beef for about 10 minutes. Stirring every minute or so to prevent burning.
  6. Once the ground beef looks just about cooked through turn the heat on the stovetop off and add the shredded cheese and crumbled bacon. Stir everything together until the cheese is evenly distributed and the cheese starts to melt.
  7. Now scoop your burger mixture into the pepper halves in your baking dish. Pack them as full as possible until you have used up all of your burger mixture.
  8. Then drizzle a little extra virgin olive oil over the top of the peppers. Place the stuffed peppers into the oven and cook at 375° for 15 minutes.
  9. Once the peppers are done remove them from the oven. Plate and sprinkle sliced red chili peppers on top and drizzle with a little sriracha mayo!
