Chocolate Banana Protein Muffins
Ingredients:
- 3 Banana (275 grams)
- 2½ cups Chocolate Protein Pancake Mix, Kodiak (265 grams), (Brand Kodiak Cakes)
- 1 cup 2% Milk (8 oz)
- 1 cup Non-Fat Greek Yogurt (8 oz), (Brand Fage)
- ½ cup Unflavored Protein Powder (50 grams) (Optional, but will effect macros0
- 1 tsp Baking Powder
- ⅔ cup Dark Chocolate Chips (115 grams)
Instructions:
- Pre-heat oven to 350°, line a muffin tin with muffin cups or spray with non-stick spray.
- Peel your bananas and place them in a large bowl, using a fork smash your bananas.
- Then add the remaining ingredients: chocolate protein pancake mix, milk, yogurt, protein powder, baking powder and chocolate chips. Stir together until everything is evenly distributed, but not over mixed. You will still have lumps from the bananas.
- Pour your mix into your muffin cups or tray, filling to about 75% full. Bake in the oven at 350° for 20 minutes.
- Test to ensure doneness by inserting a toothpick, it should come out clean, if not cook another minute or two.
- Allow to cool and enjoy!
