I love creating recipes, but sometimes I don’t have the time to put into a new recipe. Sometimes I look around the kitchen at what I have and just toss things together. Sometimes these last-minute, tossed-together recipes turn out to be AMAZING! Like this Curry Spiced Chicken with Couscous and Broccoli! I was craving Indian, but the only Indian ingredient I had was the curry powder…it did the trick! This is a quick one-pot meal you are going to love!

Ingredients to make Curry Spiced Chicken with Couscous and Broccoli

  • 16 oz Boneless, Skinless, Chicken Breast cut into bite-sized pieces
  • 1 tsp Curry Powder
  • 1 tsp Garlic Powder
  • 1 tsp Cayenne Pepper
  • 1 tbsp Extra Virgin Olive Oil
  • 2 cups Water
  • 1 cup Pearl Couscous (about 150 grams)
  • 2.5 oz Cream Cheese
  • 1 head Broccoli cut into small florets (about 275 grams)
  • 1 cup Water
  • ½ Red Onion sliced thin, (about 75 grams)

Instructions:

  1. Start by heating a large stovetop pan to medium heat.
  2. While the pan is heating, chop up your chicken and broccoli.
  3. Season your chicken with 3/4’s of the curry, garlic, and cayenne. The rest will be added towards the end.
  4. Once your pan is hot add your oil to the pan, then add your chopped chicken. Spread your chicken out into an even layer and allow to cook for 3-5 minutes, until that side is golden brown.
  5. After 3-5 minutes, toss your chicken in the pan and continue cooking for another 2 minutes tossing often. Your chicken will not be full cooked at this point.
  6. Now add 2 cups water and 1 cup couscous to the pan. Turn the heat up so that your water begins to boil. Cook the chicken with the couscous for 5 minutes. Stirring every 2 minutes or so.
  7. After about 5 minutes most of the water should be absorbed into the couscous. Now add the additional cup of water and the cream cheese to the pan. Stir everything together for 1 minute until well incorporated and the cheese begins to melt.
  8. Now add the broccoli to the pan, spreading the broccoli out on top of the other ingredients. No need to mix the broccoli in just yet. This allows the broccoli to sort of steam on top. Turn the heat down to medium-low and cover with a lid. Cook for 6 minutes.
  9. After 6 minutes remove the lid, season with the remaining curry, garlic, and cayenne, and season to taste with a tiny bit of black pepper and salt. Then add the sliced red onions. Stir everything together. By now your broccoli should be just about done.(I like my broccoli to still have some crips to it, not mushy)
  10. Cover with the lid and cook for another 1-2 minutes. Stirring every 30 seconds to prevent burning. After 2 minutes the dish is done. Serve and enjoy!

The fat in this recipe comes from the oil and the cream cheese. The cream cheese is VERY easy to adjust. You could remove it all together making this a low-fat recipe. Or you could as much as double it and make this a super creamy recipe!

Couscous is the easiest source of carbs in this recipe to adjust. When making adjustments to the amount of couscous you will also want to adjust the amount of water you boil it in. 2 parts water to 1 part couscous.
