Zucchini Egg Nests with Sausage

We eat with our eyes first, so why not enjoy these beautiful Zucchini Egg Nests with Sausage first thing in the morning. They might look hard to make but I am telling you they are super easy…all you need is a spiral slicer!

Ingredients to make Zucchini Egg Nests with Sausage:

  • 3 Zucchini spiral sliced, (about 600 grams)
  • ¼ tsp Sea Salt
  • ¼ tsp Black Pepper
  • ¼ Red Onion sliced thin, (about 50 grams), optional or you can use shallot
  • 6 Large Whole Eggs
  • 3 links Fire Roasted Red Pepper Chicken Sausage sliced in half, long ways to cook
  • 1 Jalapeno sliced
  • 1 stalk Scallions sliced
  • ½ tsp Red Pepper Flake

Instructions:

  1. Start by preheating your oven to 375°. Line a baking sheet with tin foil and spray it lightly with nonstick cooking spray.
  2. After spiral slicing your zucchini noodles, separate them into 6 small piles on your baking sheet. Then create a well/hole in the center of the noodles, creating a little nest. Sprinkle a few slices of red onion on top of the zucchini noodles.
  3. Season the zucchini noodles with salt and pepper. Then crack one egg into the center of each zucchini noodle nest. Once you have cracked the eggs in the center, place your baking sheet into the oven and cook for 10-12 minutes. Until the top of the egg whites are no longer runny.
  4. While the eggs in their nest are cooking, heat a medium saute pan to medium-low heat. Once the pan is hot place your halved chicken sausages on the pan, cut side down. Cook for 3-5 minutes, then flip and cook on the other side for another 3-5 minutes. Just enough to get a little browning on both sides.
  5. Once your sausage is cooked slice it up however you would like and plate it.
  6. By now your zucchini egg nest should be done. Remove the tray from the oven, and using a large spatula move the egg nests to your plates.
  7. Sprinkle your jalapeno and scallion slices overtop of your nests, and season with a little red pepper flake. Serve and enjoy!
